Coffee (Coffea arabica L) was introduced in the State of Espirito Santo in the beginning of XIX century, due to the expansion of the cultivated areas of the Paraiba Valley, Sao Paulo. Coffee monoculture was the predominant activity in Espirito Santo agriculture at the end of this century. It occupied the f?irst place in the economy and, from 1850, became the main vector of development and responsible for the formation of villages, towns and cities. A polpa da banana verde é fonte de amido resistente e seu emprego para produção de farinha resulta em um ingrediente para produtos de panificação, agregando
saudabilidade. Desta forma, buscou-se a produção de farinha de banana verde por método tradicional (FBV_T) e farinha de banana verde modificada (FBV_M) na produção
de pães de forma, com substituição parcial da farinha de trigo. Estes foram processados segundo formulação padrão modificada (0%, 15%, 30% e 45% de FBV_T e FBV_M,respectivamente). Após assamento estes foram avaliados quanto à perda de massa, volume específico, densidade e firmeza. Ambas formulações a 15% foram equivalentes ao padrão, enquanto a 45% apresentou elevada firmeza do miolo, reduzido volume específico e elevada densidade. As formulações com até 30% de FBV_T e 45% de FBV_M resultaram em alterações das propriedades físicas dos pães, contudo devem ser avaliadas quanto à aceitação sensorial. |
